What We Eat In A Day
K: Although Brandon and I are far from living our best healthy lifestyle, we cook a lot and refrain from eating out or drinking alcohol regularly. I really believe that has helped us from gaining weight in our adult years, but we do still struggle with a balanced diet. Some weeks, we do really well, and others, we fall off the wagon and order a large pizza! That being said, we’ve really tried to focus on healthy meals this month and it’s something we’re still challenging ourselves with as we enter into fall. I’ve always found these types of posts interesting and love hearing what a normal day looks like for the everyday couple. I chose to showcase the meals that we’d consider the most “normal” for the two of us. Nothing fancy, extravagant, or difficult; just the ones we cook regularly on a day to day basis. Breakfast
K: Breakfast is my favorite meal of the day and I typically eat a big meal to fuel up. Smoothies, egg whites, toast with almond butter are just a few of my favorites. Since I have more time in the summer now, I love making avocado toast with Trader Jo’s everything seasoning on top. I also try to allow breakfast as my time for carbs, rather than having them at dinner. I just discovered these amazing protein blueberry muffins (made with greek yogurt and no added sugar). They are AMAZING and I feel like they’ll become a new staple for us! Finally, I do treat myself to a latte every now and then on my way to school or if I’m working at a coffee shop during the summer. When I don’t stop for coffee, on a day to day basis I always have my Yogi Blueberry Slim Life green tea and it is my absolute favorite!
B: I’ve only just recently started eating breakfast on weekday mornings. I keep things extremely simple since I’m up at 6 AM and opt for yogurt. If I get hungry at work in the morning, sometimes I’ll eat a Belvita bar as a snack. I’m just not much of a breakfast person and feel like if I eat too heavy in the morning, it makes me feel a little off for the rest of the day.
Lunch
K: I love a good sandwich for lunch and we buy Dave’s bread which is so much better for you than almost anything else at the store. Because of this, I don’t feel terrible about a sandwich choice. I’m notorious for keeping things simple and just doing turkey breast and a slice of provolone cheese. Lately though, I’ve been trying to lessen my carbs so I’ll just eat slices of turkey without the bread. Apple slices are an everyday occurrence for me and I also love Lara Bars for a healthy lunch snack. If I’m being honest, many days I’ll have a handful of Goldfish as well. If I’m feeling bored and want to switch things up, I’ll make some sort of a vegetarian lunch like the cauliflower salad pictured below. Oddly enough, in the summer months I’ve also been having smoothies for lunch, making sure that they’re packed with protein to keep me full for the afternoon. There’s been something refreshing about a cold smoothie in the hottest part of the day!
Brandon: I also keep things pretty simple for lunch. A turkey sandwich or an almond butter and jelly sandwich is my go-to. A hefty bag of goldfish and an apple are also included almost daily. I’m sure people will think I’m boring, but I eat the same lunch almost every day.
Dinner
K & B: Dinner for us is different every night. We did a post a while back about healthy recipes and many of those are ones that we make pretty regularly. Among the regulars and favorites are cauliflower pizza, taco bowls (everything you’d have in a taco, minus the tortilla), cauliflower fried rice, chicken tortilla soup, or roasted veggies + chicken. Once a week we’ll eat some sort of pasta dish like this creamy spinach tortellini recipe. You can see all of these recipes on our Pinterest board “Our Recipes”
Snacks
K: I’m not a big snacker. During the school year, I don’t have time to eat unless it’s lunch. Sometimes if I get hungry in the summer, I’ll have a handful of almonds or cashews, a piece of fruit, carrots and hummus, Bare apples, etc. One thing I’ve tried to give up but can’t seem to shake is dessert. Every night I have a little something sweet. Favorites include Yasso frozen yogurt, chocolate covered raisins from the bulk food section, healthy oatmeal chocolate chip cookies, or just a piece of candy. Right now, I’m actually in the middle of a “no dessert” attempt. It’s going fairly well so far and I’m hoping that it will help me cut my sugar intake by a lot!
B: My primary snack in the evening is a bowl of cereal. This is my favorite way to end the day! I also partake in Katherine’s dessert if she’s made something. Who can say no to an oatmeal chocolate chip cookie?
